Take Dinner Up A Notch With This London Broil

Though it sounds like London Broil would be a treat from across the pond, this steak dish actually originated in America in the mid-1900s. The dish gets its name because the method by which you cook the steak – under the broiler, or the grill as the Brits call it – is a common method for cooking anything from veggies to meat in England. London Broil requires very little hands-on time and it cooks quickly as well, so you can truly whip it up any night of the week. Let’s tuck in!
What is London Broil?
London Broil is a cut of tougher beef that is tenderized, marinated, and cooked quickly under the broiler of an oven until it is medium to medium-rare. The most common cut for London Broil is flank steak, though the top round is also a popular choice. After the steak is tenderized, it is marinated in an acidic marinade to break down the toughness into a much more tender steak. You can marinade your London Broil for as little as four hours or up to 12 hours, though any time over 12 hours may cause the steak to get too soft.
London Broil cooks under the broiler for just about 10 minutes, which means that it’s quick enough to serve on a busy weeknight. However, the zingy flavor and impressive presentation of London Broil also make it a great option for dinner parties or celebratory evenings.

How to Make London Broil
You’ll first start by tenderizing the steak into an even layer. Next, it’s time to whip up the marinade for the steak. This recipe for London Broil contains a delicious balance of salt, fat, and acid (the heat comes later when the steak is cooked for any Samin Nosrat fans!) with olive oil, lemon juice, balsamic vinegar, Worcestershire sauce, soy sauce, and other flavor boosters. While the steak is marinating, you can make the herb butter that accompanies the steak. Though it’s technically optional, it adds a ton of rich flavor to the final dish! Finally, after 4-12 hours, take the steak out of the marinade and cook it under the broiler for 5-7 minutes on each side.
Serve the London Broil with a few tablespoons of the reserved marinade (saved before the steak is added) and the herb butter for a delicious dinner any time!
